cooking! fun times!

SUPEREASY SEMICHEAP SEMIHEALTHY MINCED MEAT SOUP à la matthew
serves 4
- a nice cute soup kettle
- potatoes, 5 largeish ones
- a few carrots
- 400g minced meat (well obviously…) (light & beef if you’re counting calories)
- 1 beef stock cube (not necessary but useful)
- leek (bout 4cm should do the trick but you can’t really ruin a soup with leek)
- anything else that tickles your fancy/can afford… swedish turnips, onion, garlic cloves etc etc etc
- black pepper / allspice and other spices of your choice
Boil half a kettle of water, peel your potatoes if you absolutely want to (i never peel mine but whatever) chop them ‘tatoes to nice eatable pieces (not too small though or it will be mashed potatoe soup and we definitely don’t want that) and throw them in. Chop carrots to eatable pieces (and whatever else you have chosen) and add to soup. Add beef stock cube, leek, a few black peppers or use allspice (personally i prefer allspice, not as traditional as black pepper but it gives a nice twist and leaves more room for other spices.) and cook slowly for 15 minutes. Meanwhile, brown minced meat and season with a pinch of salt, capsicum powder, etc (how much you should season it depends on whether you used a beef stock cube or not since it contains a lot of salt/flavour itself). Add minced meat to soup and cook slowly another ~10-15 minutes. See if your potatoes are somewhat softened and check the flavour – remember you can always add salt afterwards but it’s difficult to take the saltiness off if you’ve overdone it. Serve with rye bread and good company. And what’s best, the soup gets even better every time you heat it up again (not forever though duh but at least a couple of times!). Took me half an hour, cost me 5,10 euros and made me happy and full.
